Caramel Apple Cake (GF)

This week I'm making a warm and comforting gluten free caramel apple cake. This is a treat perfect for Fall!

Ever since I can remember, my granddaddy has always been the best apple peeler. Every time I visited him, he would peel an apple for me. Sounds cliché, but the love put into that small labor made those apples taste 100% better than any other apple. Recently, I went to visit my grandparents, and despite me being 26 years old now, my granddaddy still peeled me a huge honey crisp apple. It tasted just as good as I remember. He also gave me a 3 lb. bag of apples to take home. This visit inspired me to make a dessert as warm and comforting as the experience with my granddad. That's how this cinnamon spiced caramel apple cake was born.

Gluten Free Caramel Apple Cake
Ingredients
Cake
1 cup (2 sticks) unsalted butter, softened
1 ½ cup light brown sugar
½ cup white sugar
5 large eggs
¾ cups sour cream
2 tsp vanilla extract
1 tsp salt
½ Tbsp cinnamon
2 tsp baking powder
3 cups gluten free flour (I use Bob Red Mill's 1:1)*
2 small apples
Caramel Topping
½ cup (1 stick) unsalted butter, melted
1 cup light brown sugar
1 tsp cinnamon
A pinch of salt
Directions
Preheat oven to 350°F and generously grease a fluted cake pan.
Core the small apples and thinly slice them. Set aside while you work on the cake.
Cream the butter and sugars together for 3 to 5 minutes, or until fluffy.
Add the eggs one at a time, beating after each addition.
Next, add the sour cream and vanilla and mix.
Mix in the salt, baking powder, and cinnamon.
Gently fold in the flour. Be careful not to overmix.
Pour the melted butter into the bottom of the fluted cake pan. Add in the brown sugar, cinnamon, and pinch of salt and mix in the bottom of the pan until fully combined.
Layer the apple slices on top of the caramel mixture.
Scoop the batter into the pan and smooth the top.
Bake the cake for 70-75 minutes.
Allow the cake to cool until slightly warm and enjoy!
