One Bowl Chocolate Cake

Got a craving for chocolate? This decadent cake with a whipped ganache frosting will delight your tastebuds!
My niece is a chocolate lover just like me! So, when she requested that I make her a super chocolate cake for her 9th birthday, I immediately got to work. If you enjoy deep and rich chocolate cakes, this is the recipe for you!

One Bowl Chocolate Cake
Ingredients
2 cups all purpose flour
1 cup cocoa powder
1 ½ tsp baking powder
1 ½ tsp baking soda
1 tsp salt
2 cups white sugar
1 cup whole milk
2 eggs
¼ cup vegetable oil
¼ cup unsalted butter, melted
2 tsp vanilla extract
1 cup hot coffee or water
1 cup chocolate chips
1 cup heavy whipping cream
Directions
Preheat oven to 350 degrees fahrenheit and line two 9 inch pans with parchment paper.
For the whipped ganache:
Place chocolate chips in a large bowl. Heat the heavy cream on the stove or in the microwave until almost boiling. Watch it carefully!
Pour the heated cream over the chocolate and allow to sit for 5 to 10 minutes.
Stir this mixture until everything is smooth.
Allow the ganache to cool to room temperature. Sometimes I like to put it in the freezer or fridge while I'm working on the cake to make it cool faster!
Once your ganache is cooled completely, whip it with a hand or stand mixer until it's fluffy. (Taste the ganache as you're whipping it for sweetness. I prefer deep, dark chocolate flavor, so I didn't add any extra sweetener. If you want it sweeter, however, add powdered sugar about 1/4 cup at a time until it reaches your desired sweetness.)
For the cake:
Sift the flour, cocoa powder, baking powder, baking soda, and salt into a large bowl.
Add the sugar to the bowl and whisk until evenly incorporated into the dry ingredients.
Next, add the milk, eggs, oil, butter, and vanilla into the dry ingredients. Mix this until the batter just starts to come together.
Pour in the hot water or coffee and mix until a smooth, thin batter forms.
Pour the batter into prepared pans and bake for 30 minutes, or until a toothpick comes out with well formed crumbs. (You do not want your toothpick to be totally clean. That is a sign of a dry cake.)
Allow the cake to cool completely and top with the whipped ganache frosting made earlier.
