Easy Spinach and Cheese Pastries

Updated: Sep 23, 2023

Today we'll be making cheesy and flaky spinach pastries.

There's really nothing quite like a spinach and cheese combo! Whenever I go to a restaurant, it's very likely that the appetizer I order is spinach and artichoke dip, a spinach flatbread, or anything else with spinach and cheese. So, I absolutely had to make something with spinach and cheese in my own kitchen. That's how these savory and delicious puff pastries came to be!

Here's a video of the process if you'd like to follow along.

Spinach and Cheese Pastries

Ingredients

  • 1 sheet puff pastry

  • 8 ounces (1 block) of cream cheese, softened

  • 1 package of frozen, chopped spinach, thawed and drained

  • ½ cup parmesan cheese

  • 1 cup mozzarella cheese

  • ½ tbsp onion powder

  • ½ tbsp garlic powder

  • ¼ tsp red pepper flakes

  • Salt and pepper to taste (I use about 1 tsp each)

  • 1 egg

  • 1 tbsp water

Directions

  1. Preheat your oven to 375 degrees fahrenheit and grease and line a cookie sheet with parchment paper.

  2. In a large bowl, whisk softened cream cheese for 2 minutes or until smooth with no lumps.

  3. Squeeze any excess water out of the spinach, then add it to the cream cheese. Mix until combined.

  4. Mix in the cheeses and seasonings. Taste your filling and adjust the cheese and seasonings to your liking if necessary. Set the filling aside while we work on the puff pastry.

  5. Place the puff pastry sheet on a lightly floured surface.

  6. Cut the puff pastry into 9 even squares. Use a floured rolling pin to flatten out each square a little more.

  7. Spoon 1 to 2 tablespoons of the spinach filling into the center of each pastry square.

  8. Fold each corner of the filled puff pastry towards the middle. The finished product should look like a square envelope.

  9. Transfer the filled dough pieces to the cookie sheet.

  10. Whisk together the egg and water to create an egg wash.

  11. Brush the pastries with the egg wash and bake them for 15 to 17 minutes, or until golden brown.

  12. Allow the pastries to cool, or eat them fresh out of the oven!
